Pea, Feta & Mint Fritters

Pea, Feta & Mint Fritters - fantastic simple quick and light fritters that make for a great tasty lunch or dinner! I love the fresh peas with bursts of feta. Serve with fresh and zesty lemon yoghurt!

Fritters

  • 1 1/2 cup peas

  • 100g feta

  • ½ cup mint, roughly chopped

  • 2 egg

  • 4 Tbsp wholemeal flour

  • 1/2 tsp baking powder

  • Drizzle of olive oil

Lemon yoghurt

  • 2 Tbsp Greek yoghurt

  • Zest of ½ lemon

  • Squeeze of lemon juice

  • Splash of water

Heat a medium pan and cook peas until tender and bring green. Transfer to a bowl and lightly crush with a fork.

Crumble in feta. Add egg, flour and baking powder. Mix to combine and season with salt and pepper.

Heat a pan over a medium heat with drizzle of oil. Cook 1/4 cup of fritter mixture and cook until golden, flip and continue to cook (about 2min each side). Cook fritters in batches until all the mix is cooked.

Meanwhile, mix together yoghurt, lemon zest and juice and season with salt and pepper. 

Serve fritters with yoghurt sauce fresh or store in a container for a great and tasty packed lunch.
