Chilli Honey Cherry Tomato Pasta

Looking for a quick, flavourful packed pasta dish that balances sweet, spicy, and savoury all in one bowl? This Chilli Honey Cherry Tomato Pasta is perfectly delicious and simple! Packed with vibrant cherry tomatoes, a kick of chilli, and a hint of honey, this dish offers a tasty twist on classic pasta. The crispy golden halloumi adds a satisfying texture, while fresh parsley brings a burst of brightness. Ready in under 30 minutes, this recipe is perfect for busy weeknights or an impressive yet simple meal to share with friends.

  • 1 onion, diced

  • 1 tsp minced garlic

  • 2 tsp minced chilli

  • 1 tbsp tomato paste

  • 2 tbsp sun dried tomatoes

  • 1 can cherry tomatoes

  • 2 tsp honey

  • 250g dried fettuccini pasta

  • 1 block halloumi, diced 

  • Parsley, roughly chopped

Bring a large pot of salted water to the boil and cook pasta until tender. Drain and set aside. 

Meanwhile, in a pan with a drizzle of olive oil, cook onion for 1-2 minutes until tender. Add garlic and chilli and cook for a further 1-2 minutes. Add tomato pasta, sun dried tomatoes and canned tomatoes. Stir to combine before adding the honey. Simmer for 10-15 minutes until it starts to thicken and everything is well combined. 

Mix tomato sauce through pasta. In pan used to cook tomato sauce, add halloumi and cook until golden and crispy. 

Serve pasta topped with halloumi pieces and fresh parsley. Season to taste with salt and pepper.
